Strawberry Fields Forever!

And to think we were just talking Strawberries last week!

I saw a quick note on this morning’s news on berries and how having one cup of strawberries per week, and half a cup of blueberries per week can help improve your memory.   As a mom, wife and career woman, I often find myself wondering where I left anything from my car keys, to the remote…  even my cup of coffee, which is pretty much SCARY, especially in the mornings!   How many times have you had to check, and double-check your purse to see if your wallet, car keys,  makeup bag –very important-  and cel phone are there? There are days when I am convinced that either I am an extremely confused woman, or I am definitely losing it!

While health professionals are often skeptic on providing assurances on the role that a good nutrition has on an individual’s overall health, having a healthy, nutritious eating habit DOES NOT HURT!  

According to Elizabeth Landau, CNN.com Health Writer/Producer, ” …Here’s how berries might help: mitochrondria are energy generators of brain cells, and have been thought to also produce substances toxic to the brain that lead to Alzheimer’s disease. These toxic compounds are called “free radicals,” which damage brain cells and impair cellular processing. Berries are rich in flavonoids, which can act as antioxidants, interacting with free radicals before they cause damage”.

Slow Down! Driving on the right side of the fast-life lane

My husband and son don’t know if it is a blessing in disguise, or just plain crazy that I started collaborating with Green Health Stores. !  I do notice however a significant change when we eat properly – fruits and vegetables specifically!  

I have always been HUGE on nutrition!  But here is what I struggle with the most:  BALANCE between my personal and professional life.   Where are the times when the parent had a loving dinner ready, including fruits and vegetables?  (in my case Mom- it was better to have Dad take care of other things around the house…  NOT the cooking!) What ever happened to having fruit as dessert? Don’t you miss a banana milk shake in the morning?  Have we seriously gone into the fast life lane so fast that we have forgotten what a positive impact eating properly has, not only for our physical, but our emotional health as well?

At this point I am blessed to have a teenage -17- son, who can practically fix himself something to eat, providing you remind him a couple thousand times!   This means that the mornings of rushing and shoving something down the child’s throat before we hit the door are ALMOST gone!!!  But if you are the mother of a young child, how do you do it? How did I manage?  Do I have to live with the guilt of not having fed my son nutritiously enough?

I think I finally figured it out.  Here are some little tips that have helped me not to feel SO guilty! Enjoy!

·         TEACH YOUR KID TO COOK! Or at least not to get burned when re-heating leftovers!

·         Always cook a little extra.  Don’t you just LOVE left overs?  

·         If you are cooking dinner one night, start dinner for the following night.  Before you know it, you will not only have that night covered, but the third night with the previous night’s leftovers.

·         Salad time!  And for picky eaters, fruit salad! 

·         Breakfast for dinner.  It’s like you are breaking the rules…  just a little!  It is OK to have scrambled eggs and fruit for dinner sometimes!

DID I SAY I LOOOVE MY JOB?

I LOVE MY JOB!

I was brought on earlier this year to help tell the story of MCR Innovations and Packaging.   The organization has licensed, perfected and patented a vegetable-based dehydration formula that pretty much removes the water exclusively from food, and leaves all the nutrients IN IT.  MCR also works on developing products that come from dehydrated products: body care items (with amazing facial and body creams, body wash and shampoos, just to name my favorites!),  nutraceutical and energy products, pet care and home care Items.  The access of the latest green technology  products is through Green Health Stores.

You know, when I first joined the company, the first thing that jumped to my mind was going back to basics: nutrition as the foundation for my family’s health.   The product that we process – mainly dehydrated fruits and vegetables – is unbelievably nutritious.  I can tell you I have certainly enjoyed incorporating Green Health Products into my daily diet!  Discovering how to take advantage of the enhanced flavor of the food is fascinating!    

For example, I was making a tomato and vegetable pasta sauce just a couple of nights ago.  First of all, how much did I need to use? I opened the bag – which by the way is extremely aromatic- tried a bite, and was pleasantly surprised with the taste.  So for REALLY ‘tomatoey’ sauce (my favorite!)  go ahead and add ALL of the Dehydrated Tomato IN THE PAN!    

And check this out!  I was making a pot roast dinner with celery and carrots.  I could go on and on about the celery….  But that is not my point!    I placed a couple of the carrots in a small glass of water.  Not only did it rehydrate, but the water tasted PRETTY GOOD!  Recently tried it with strawberries, and now have a pitch of strawberry water in my fridge!

It is great to be part of a wonderful team and have access to health and nutrition at my fingertips.  Self-serving?  Perhaps.   Discovering the Chef I secretly (VERY secretly) had inside….  Priceless!
